The tenderloin, often referred to as the filet or filet mignon, is thought of as the most tender portion of beef, and highly sought after as the best cut available. Typically quite lean, it is a gem with often lace like marbling in Wagyu. It must not be over-cooked!

Larger packages when available are typically two or three steaks.

We offer farm pickup on any product shown as in stock at 175 Miller Rd.

Local and regional delivery is available up to 60 miles from the farm excluding Long Island at check out. Please consider contacting us first to learn available delivery dates for your area though.

Finally shipping via UPS is now available. We can ship via the options available to you during chackout Mondays and Tuesdays each week. Perishables must,ship seperate from hard goods.

50% IMF or Greater
Blue Label

The Blue Label represents the pinaccle of Wagyu beef. When you see invetory available with this designation you have the opportunity to purchase wagyu beef raised on our small farm in Southeast Connecticut that has achieved an IMF (Intermuscular Fat) of 50% or greater as calculated by our carcass camera. This is on the same plain as the very best imported A5 Wagyu but can never be labeled such as only a Japanese Meat Grader can assert the designation.

40-49.99% IMF
Red label

Our Red Label showcases how special Wagyu are. Inventory available with this designation rivals imported Japanese wagyu with an A5 designation. This wagyu beef was raised on our small farm in Southeast Connecticut though and has achieved a an IMF or marbling percentage between 40 and 49.99 percent.

26-39.99% IMF
Yellow Label

Our Yellow Label collection comes from cattle with a marbling percentage between 26 and 39%. So literally starting at twice the percentage of marbling required to be graded USDA Prime, it is orders of magnitude better than anything you'll find in a supermarket.

Green label

Our Green Label collection consists of premium steaks originating from Fullblood and Percentage Wagyu cattle having achieved marbling or IMF percentages below 26%. Of utmost importance to us is transparency in our processes, when available Fullblood and percentage meat will be marketed seperately under designations making clear the percentage from which your selection originates.
