The Blue Label represents the pinaccle of Wagyu beef. When you see invetory available with this designation you have the opportunity to purchase wagyu beef raised on our small farm in Southeast Connecticut that has achieved an IMF (Intermuscular Fat) of 50% or greater as calculated by our carcass camera. This is on the same plain as the very best imported A5 Wagyu but can never be labeled such as only a Japanese Meat Grader can assert the designation.
Our Red Label showcases how special Wagyu are. Inventory available with this designation rivals imported Japanese wagyu with an A5 designation. This wagyu beef was raised on our small farm in Southeast Connecticut though and has achieved a an IMF or marbling percentage between 40 and 49.99 percent.
Our Yellow Label collection comes from cattle with a marbling percentage between 26 and 39%. So literally starting at twice the percentage of marbling required to be graded USDA Prime, it is orders of magnitude better than anything you'll find in a supermarket.
Our Green Label collection consists of premium steaks originating from Fullblood and Percentage Wagyu cattle having achieved marbling or IMF percentages below 26%. Of utmost importance to us is transparency in our processes, when available Fullblood and percentage meat will be marketed seperately under designations making clear the percentage from which your selection originates.
